Diwali is the festival of lights, crackers and sweets. Days before the festival, the females of the family start preparing traditional delicious dishes for the family and friends. Food serves an important part in the Diwali celebration. Sweet Dishes are the most popular dishes of diwali. People distribute special Diwali sweets made by them on this occasion to their friends and neighbours. So here we are providing to you a few traditional mouth watering recipes on the ocassion of diwali so that you can enjoy the festival more.
Sandesh Recipe:-
Ingredients:- 100 gms Chenna, 2 tbsp Milk, 4 tbsp Powdered Sugar, few drops of Rose/Kewra Essence, Silver Foil.
Method:- Blend all ingredients in a pan gently then cook on a low flame stirring continuously till the mixture becomes not too dry and not too soft after that put off the flame and arrange the mixture on a plate now cool it and cut it into pieces and decorate with silver foil, now Sandesh is ready serve it.
Sweet Cutlet Recipe:-
Ingredients:- 1cup Wheat flour, 2 tbsp Maida, 5o gm Jaggery, 3 Bananas, 6 tbsp Oil, salt (to taste).
Method:- Combine wheat flour, maida, jaggery and banana now mix and form smooth dough without adding water. Shape the dough into oval cutlets. Heat oil in a pan and fry the cutlets until golden brown now serve hot with green chutney.
Badam Phirni Recipe:-
Ingredients:- 12 nos. Almonds, 4 tbsp Rice flour, 21/2 cups Milk, 5 tbsp Sugar, 8 strands Saffron, 1 tbsp Cardamom powder.
Method:- Grind the almonds to a fine paste with 1/2 cup milk. Mix it together the ground almond paste and rice flour and keep aside now bring the milk to a boil, add the sugar and stir till the sugar dissolves, keep aside a tablespoon of hot milk and dissolve the saffron in it. Add the almond rice mixture into the boiling milk along with the saffron then stir continuously for a few minutes till the milk thickens and attains a custard like consistency. Sprinkle in the cardamom powder. Take off fire and cool to room temperature. Pour into individual bowls, garnish with almonds and pistachios and refrigerate.
Soan Papdi Recipe:-
Ingredients:- 1-1/4 cup Besan, 1-1/4 cup Maida, 1-1/2 cup Water, 2 tbsp Milk, 250 gms Ghee, 2-1/2 cups Sugar, 1/2 tsp Cardamom seeds(crushed coarsely), 2 tsp Charmagaz, 4 Inches square pieces of thin polythene sheet.
Method:- Mix maida and besan properly after that take a heavy saucepan and heat ghee in it now add flour mixture and roast on low heat until light golden, cool a little, stirring occasionally after that make syrup of sugar, water and milk. Bring syrup to 2-1/2 thread consistency now pour it into the flour mixture. Beat properly with a large fork until the mixture forms thread like flakes. Transfer onto a greased surface and roll to 1 inch thickness now add the charmagaz seeds and cardamom. Push down with palm, cut into 1 inch squares, when cool, wrap separately into square pieces of thin polyethene sheet and after that serve it.
Imarti Recipe:-
Ingredients:- 2 cups urad dal, 3 cups sugar, 300 ml. water, saffron colour, 1/2 tbsp cardamom ground, 500 gms ghee to fry.
Method:- Soak urad dal overnight in plenty of water, wash and drain. Grind to fine thick batter now put water little by little then add colour and mix very well. If using a mixie, beat the dal well by hand till fluffy after grinding. Keep aside for 3 hours now make 1 tar sugar syrup. Add cardamom powder to syrup. Using either an imarti bottle (with nozzle) or cloth, form imartis in the hot ghee. Lower flame and allow to crisp turning once. Remove from ghee, drain and dip in hotsyrup. Soak for 3-4 minutes, drain and serve. Make 4-5 imartis at a time. After that serve it.
